Immortals are a fantastic new unit introduced to us for Protoss in Starcraft 2. They have some insane benefits, such as when they have shield left they reduce large damage attacks to ten damage. This means Siege Tanks, Collasus Rays, Marauder grenades, all are reduced to just ten damage, if the Immortal has its shield.
Not to mention Immortals also pack quite a decent punch, doing extra damage to Roaches, buildings, and anything armored. Immortals also fire quite quickly, making them decent verses Zerglings and other melee units, so long as the Immortals have some room to fire.
I like to throw Zealots in with my Immortal army, and a few Sentries. This way the Sentries can shield our units from incoming ranged attacks, which also gives the Immortals more shielding. Then the Zealots (I always upgrade Charge) fling into the fight, providing a front line for the Immortals to mow other units down.
Immortals are also great at taking care of buildings. So if the opponent has base defense, let the Immortals soften it up before you send in your other troops.
What I really like about Immortals is you can build them immediately from a Robotics, instead of having to wait like for Collasus. The largest weakness to Immortals is their in-ability to attack air, and their slow movement speed. This means that if you get overwhelmed by air units, not only can the Immortals not damage them, they can't run very quick.
So be sure the more air you see from your opponents, the more Stalkers/Void Rays/Sentries you have to keep the immortals clear of said air.
